A perennial plant, common name a black root for the black color of the root crop. The length of the root crop is 10-12" (25-30 cm) in the first year, with a spicy delicate taste. The root is used for food as a seasoning for soups, as well as an independent vegetable dish or side dish. The presence of inulin in the root crops of scorzonera allows people with diabetes mellitus to use the plant. Harvesting is carried out in early autumn.
